Person overboard POB

Someone yells: "PERSON OVERBOARD!".

Calmly direct crew(s) to point at all times to the POB.

Sail away from the POB on a beam reach.

Perform a "granny tack" to avoid a gybe while everybody is stressed.

Sail on a broad reach.

Approach the POB on a close reach.

Ease sheets as needed to slow the boat and turn into the wind to pick up POB.

I like these videos, but they use a leeward pickup of the POB. Some prefer windward pickups. There are good arguments for both versions. It's good for boat handling to practise both pickups. Windward avoids the boat rolling onto the POB, leeward may be easier to approach POB.
